This Savory Mushroom and Herb Polenta Bake is a comforting dish featuring creamy polenta layered with sautéed mushrooms and a mix of fresh herbs. Baked until golden and topped with melted cheese, it's a delightful vegetarian option that satisfies with every bite.
Ingredients:
- 0.5 cup polenta
- 8 ounces mushrooms
- 2 cups vegetable broth
- 0.5 cup parmesan cheese
- 1 tablespoons olive oil
- 2 cloves garlic
- 1 tablespoons fresh thyme
- 1 tablespoons fresh basil
- 0.5 teaspoon salt
- 0.5 teaspoon black pepper
- 0.5 cup mozzarella cheese
- 0.5 large egg
Instructions:
- In a large saucepan, bring the vegetable broth to a boil over medium heat.
- Slowly whisk in the polenta and reduce heat to low. Stir continuously for about 20-25 minutes until the polenta thickens and pulls away from the sides of the pan.
- In a cast iron skillet, heat olive oil over medium heat. Add minced garlic and sauté for 1 minute until fragrant.
- Add sliced mushrooms to the skillet, season with salt and black pepper, and cook for about 7-10 minutes until browned and tender. Stir in fresh thyme and basil and remove from heat.
- Once the polenta is cooked, stir in the egg and half of the parmesan cheese until well combined.
- Spread half of the polenta mixture in a greased cake pan, layer with sautéed mushrooms, and then top with the remaining polenta mixture.
- Sprinkle the top with the remaining parmesan cheese and mozzarella cheese.
- Preheat the oven to 375°F (190°C). Bake the polenta bake for 25-30 minutes or until the cheese is melted and golden brown.
- Remove from the oven and let it cool for a few minutes before slicing and serving.
