Corn tortillas filled with hearty spiced cauliflower and black beans, topped with zesty lime crema and fresh salsa, served with a side of roasted sweet potato fries.

Ingredients:

Instructions:

  1. Preheat the oven to 425°F (220°C).
  2. Chop the cauliflower into small florets and place them in a bowl. Drizzle with olive oil, cumin, smoked paprika, salt, and black pepper, and toss to coat.
  3. Spread the seasoned cauliflower on a baking sheet and roast for about 25 minutes, stirring halfway through, until golden and tender.
  4. While the cauliflower roasts, peel and cut the sweet potatoes into fries. Toss them with a tablespoon of olive oil and a pinch of salt, then spread them on another baking sheet.
  5. Roast the sweet potato fries in the oven for about 20-25 minutes, until crispy, flipping halfway through.
  6. In a small bowl, mix the vegan sour cream with the juice of half the lime to create a zesty crema.
  7. Once the cauliflower is done roasting, remove it from the oven and add the canned black beans (drained and rinsed) into the pan, stirring to combine.
  8. Warm the corn tortillas on a skillet over medium heat for about 30 seconds on each side until pliable.
  9. Assemble the tacos by filling each tortilla with the cauliflower and black bean mixture. Top with lime crema, fresh salsa, and cilantro.
  10. Serve the tacos alongside the roasted sweet potato fries.
