Created by Anonymous Chef
Hearty pancakes made from oats and ripe bananas, spiced with cinnamon and vanilla, served with warm maple syrup and fresh berries for a wholesome breakfast treat.
Ingredients:
- 1 cups Rolled Oats
- 1 medium Ripe Bananas
- 1 teaspoons Baking Powder
- 0.5 teaspoon Ground Cinnamon
- 0.5 teaspoon Vanilla Extract
- 0.5 cup Almond Milk
- 1 large Eggs
- 0.5 cup Maple Syrup
- 0.5 cup Fresh Berries (strawberries, blueberries, or raspberries)
- 1 tablespoons Butter
Instructions:
- In a blender, combine the rolled oats, ripe bananas, baking powder, ground cinnamon, vanilla extract, almond milk, and eggs. Blend until the mixture is smooth and well combined.
- Preheat a cast iron skillet over medium heat. Add 1 tablespoon of butter to the skillet and let it melt, coating the bottom.
- Pour 1/4 cup of the pancake batter onto the skillet for each pancake. Cook until bubbles form on the surface, about 3-4 minutes, then flip and cook for another 2-3 minutes until golden brown.
- Repeat the process with the remaining batter, adding more butter to the skillet as needed.
- While the pancakes are cooking, heat the maple syrup in the microwave until warm, about 30 seconds to 1 minute.
- To serve, stack the pancakes on a plate, drizzle with warm maple syrup, and top with fresh berries.
