Enjoy a vibrant meal with air-fried chicken marinated in aromatic Moroccan spices, served over fluffy couscous mixed with sweet apricots, almonds, and fresh herbs. This nutritious bowl is high in protein and packed with flavor.
Ingredients:
- 500 grams chicken breast
- 150 grams couscous
- 50 grams dried apricots
- 30 grams slivered almonds
- 20 grams fresh parsley
- 2 tablespoons olive oil
- 1 teaspoon ground cumin
- 1 teaspoon ground coriander
- 0.5 teaspoon cinnamon
- 1 teaspoon paprika
- 1 teaspoon salt
- 0.5 teaspoon black pepper
- 250 milliliters chicken broth
- 1 tablespoon lemon juice
- 2 cloves garlic
- 1 teaspoon ginger
Instructions:
- In a bowl, mix olive oil, cumin, coriander, cinnamon, paprika, salt, black pepper, minced garlic, and ginger to create the marinade.
- Add the chicken breasts to the marinade, ensuring they are well coated. Let them marinate for at least 30 minutes.
- While the chicken is marinating, prepare the couscous. In a saucepan, bring chicken broth to a boil, then add couscous, cover, and remove from heat. Let it sit for 5 minutes, then fluff with a fork.
- After marinating, preheat the air fryer to 200°C (400°F). Place the marinated chicken in the air fryer basket and cook for 15-20 minutes, or until the internal temperature reaches 75°C (165°F). Flip halfway through cooking.
- Chop the dried apricots and parsley. Once the chicken is cooked, let it rest for a few minutes before slicing it.
- In a serving bowl, combine the fluffed couscous with chopped apricots, slivered almonds, and parsley. Mix well.
- Top the couscous mixture with sliced air-fried chicken, drizzle with lemon juice, and garnish with extra parsley if desired.
